Chilli and lime squid with courgette 'noodles'

Ideal summer recipe for when the sun is shining and you want something that takes minutes, is light and delicious. The squid or tofu provides the low fat protein and the kick comes from the chilli. Add more or less chilli depending upon the kick you want from this easy dish. Simply add a big salad as an accompaniment and job done.


  • 2 medium courgettes
  • 100g squid rings (or tofu)
  • Juice of 1 lime
  • 1/4 red chilli, deseeded and chopped
  • Fresh parsley, chopped

Serves 1


  1. Use a vegetable peeler to make long ribbons from the courgettes
  2. Wilt the ribbons in a pan of boiling water, drain and set aside
  3. Fry the squid rings (or tofu) in a non-stick pan until tender and opaque
  4. Squeeze the lime juice on top and stir in the courgette noodles and chilli
  5. Serve on a plate with the parsley sprinkled over the top
