Much research has shown that eating a Mediterranean diet holds key to many significant improvements to our health and wellbeing, such as:

The basics of a Mediterranean diet consist of:

  • Regular and large quantities of fruit and vegetables
  • Whole grains
  • Olive oil as a principal source of fat
  • Dairy products in small quantities
  • Moderate amounts of fish and poultry
  • Small amounts of red meat
  • No processed foods

Herbed Lamb Cutlets with Roasted Vegetables

Roughly chop the veg and combine the quick marinade, and simply leave it to cook until it’s ready to devour!

Serves 4

Ingredients

  • 2 green peppers, deseeded and cut into chunks
  • 1 large sweet potato, peeled and cut into large chunks
  • 2 courgettes, cut into large chunks
  • 1 red onion, cut into chunky wedges
  • 1 tbsp extra virgin olive oil
  • 8 lean lamb cutlets
  • 1 tbsp thyme leaf, finely chopped
  • 2 tbsp mint leaves, finely chopped

 

Method

  1. Preheat oven to 220C/200C fan. Place the peppers, sweet potato, courgette and onion on a large baking tray and drizzle over the olive oil. Sprinkle with some freshly ground black pepper to taste and roast for 25 minutes.
  2. In the mean time, combine the thyme and mint leaves together with a sprinkling of black pepper and pat all over the lamb.
  3. Remove the veggies from the oven and use a spatula to gently shift them onto one half of the baking tray. Place the lamb on the remaining half of the tray and return to the oven for a further 10 minutes.
  4. Flip the lamb and cook for a final 10 minutes – or until it is cooked to your liking and the veggies are soft.
  5. Combine everything together on the baking tray and serve immediately.
