Recipe Of The Week - Cheese & Vegetable Frittata


Eggs are a great protein source and will provide you with lasting energy. You can eat this dish for breakfast, as a light lunch or cut it into slices and enjoy as a snack. A dish that multitasks!


  • 2 eggs, beaten
  • 1 tbs chopped onion
  • 1 tbs spinach
  • 1 tbs broccoli (or any other desired vegetable)
  • 1 tbs cheese, grated

Recipe developed by Sharyn Singer

Serves 1


  1. Combine the eggs and vegetables to make a frittata (an open omelette)
  2. Top with the cheese
  3. When cooked, cut into wedges and serve
