Recipe Of The Week - Chicken Fajitas

With National Men’s Health Week is just around the corner (9th-15th June) we thought we would aim our recipe of the week firmly in the favour of the majority of males. Quick, delicious and full of meat, this is definitely a winner every time!

 

Chicken fajitas are one of those firm favourites with most people. If you fancy your fajitas with steak then simply swap the chicken for 2 x 6oz steaks. 

Ingredients

  • 2 chicken breasts finely sliced
  • 1 red onion finely sliced
  • 1 red or green pepper finely sliced
  • 1 finely sliced red chilli (optional)

Marinade

  • 1 heaped tbsp. smoked paprika
  • 1 tbsp. ground coriander
  • pinch of cumin
  • big pinch of salt & cracked pepper
  • 2 medium garlic cloves, crushed
  • glug of olive oil
  • juice 1 lime
  • 4-5 drops tabasco

Accompaniments

  • 4 x tortillas
  • bag mixed salad (rocket works well)
  • salsa, buy from the deli counter of the supermarket or make your own using our recipes. You can choose between our fresh fruity salsa or our satisfying avocado salsa.

Method

  1. Finely slice chicken, onion and pepper
  2. Add these to a mixing bowl and then add the marinade ingredients in the listed order
  3. Heat a griddle pan until smoking hot and put the tortillas in the oven wrapped in foil. Add contents of the mixing bowl to the pan and keep them moving over a high heat using tongs so you get a nice charring effect. Be careful not to overcook the chicken as it can become dry. Ensure it is cooked through by slicing a piece of chicken in half to check
  4. Once cooked, tip the pan contents into a large bowl and serve with the heated tortilla (they should have been in the oven around 8 mins.)
  5. Serve with salad and salsa
