Recipe Of The Week - Chilli & Lime Squid With Courgette 'Noodles'


An ideal recipe to create now the sun is beginning to make a regular appearance. It only takes a matter of minutes and is light and delicious. Add more or less chilli depending upon the kick you want from this easy dish. Simply add a big salad as an accompaniment and job done!



  • 2 medium courgettes
  • 100g squid rings
  • juice of 1 lime
  • ¼ red chilli, deseeded and chopped
  • fresh parsley, chopped

Serves 2


  1. Use a vegetable peeler to make long ribbons from the courgettes
  2. Wilt the ribbons in a pan of boiling water, drain and set aside
  3. Fry the squid rings in a non-stick pan until tender and opaque
  4. Squeeze the lime juice on top and stir in the courgette noodles and chilli
  5. Serve on a plate with the parsley sprinkled over the top
