Recipe Of The Week - Greek Salad

Is your new years resolution to cut out meat from your diet on the odd occasion? Perhaps you are a vegetarian but are not consuming enough protein to feel your best? If so, this recipe is perfect for providing you with a balanced meal - your protein comes from the feta cheese which is naturally low in fat.  It’s quick, it’s tasty, and will leave you feeling full and satisfied.

 

 

Ingredients

  • 1/2 bag salad leaves
  • 3cm chunk cucumber, cubed
  • 8 baby plum tomatoes
  • 1/2 small red onion, thinly sliced
  • 4 black olives
  • 50g feta cheese, cubed
  • Balsamic vinegar

 

Serves 1

Method

  1. Arrange all of the ingredients on a plate and splash with balsamic vinegar. Serve immediately.
