Recipe Of The Week - National Slow Cooking Month, Lamb Tagine


January is National Slow Cooking Month - so we thought we should kick it off with a delicious dish that cooks itself over 2 hours. We thought this would go down well at this time of year as we are sure that you have spent enough time in the kitchen over the Christmas period and are craving a warming dish in this frosty weather. Enjoy!



  • 3 tbsp extra virgin olive oil
  • 2 onions, thinly sliced
  • 1 tbsp fresh ginger root, finely chopped
  • 1kg boneless lamb shoulder, cut into 5cm chunks
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp ground coriander
  • 1 cinnamon stick
  • 425ml passata
  • 350g sweet potatoes, cut into chunks
  • 175g pitted dates

To Serve

  • large mixed green salad
  • 50g blanched almonds, toasted (optional)
  • small handful coriander, roughly chopped (optional)

Serves 5



1. Heat the oil in a large deep pan. Add the onion and gently fry for about 5 minutes or until softened.

2. Stir in the ginger, and follow this by adding the meat in batches. Fry the meat on all sides until lightly coloured. Return all of the meat to the pan, stir in the spices and cinnamon sticks, and cook for just 1 minute.

3. Add the passata and 800ml of water, bring this to the boil and stir continuously. Season with salt and pepper, pop the lid on and leave to simmer for 1½ hours. The lamb should be tender.

4. Add the sweet potato, stir, cover once again and leave for a further 20 minutes or until the potatoes are just tender. Add the dates and warm through for 5 minutes.

5. Dish up in a large serving dish and scatter over your almonds and coriander if desired, and serve with a large mixed green salad.
