Recipe Of The Week - Smoked Mackerel Nutty Pasta Salad

This is a great recipe for the whole family and ideal if you are entertaining. It's minimal effort with maximum impact and taste.

Serves 4

 

Ingredients

Pasta Salad

  • 300g whole wheat penne pasta
  • 4 handfuls green beans
  • 4 large handfuls baby spinach leaves
  • 300g thin stemmed broccoli
  • 6 smoked mackerel fillets, skinned and flaked
  • 4 tsp sunflower seeds, toasted
  • 40g walnut pieces
  • 4 spring onions, finely chopped
  • freshly ground black pepper

Dressing

  • 300ml low-fat natural yoghurt
  • 4 tsp lemon juice
  • 4 tsp wholegrain mustard
  • 8 tsp dill, finely chopped

 

Method

  1. Add he pasta to boiling water and cook according to the instructions – cook until it still retains a little bite to it. Once cooked, drain under cold water until thoroughly cooled
  2. Meanwhile, add the green beans to another pan of boiling water for 2 minutes, then add the broccoli and cook for a further 4 minutes. Once cooked, drain under cold water to cool
  3. Toast the sunflower seeds over a medium heat until slightly browned
  4. Combine all of the dressing ingredients in a large jar, put the lid on and give it a thorough shake to combine
  5. In a large bowl add the pasta, broccoli, green beans, spinach and flaked mackerel before pouring on the dressing. Gently stir to combine
  6. When serving, top with the toasted sunflower seeds, walnut pieces and spring onion. Finish with a couple of grinds of fresh black pepper
