Shrove Tuesday - Which Pancake Will Be Your Favourite?

Shrove Tuesday is just around the corner, so why not give one of our pancake recipes a whirl?

Chickpea pancakes are so versatile as you can incorporate them into a sweet or savoury dish. Banana pancakes are so moreish but take note; we suggest that you try these only if you are maintaining your weight rather than trying to lose it. 

 

 

Chickpea Pancakes

Chickpea or gram flour pancakes are a much healthier version of the traditional pancake.  These are great for weight loss too.

enough for 1 pancake - simply multiply the numbers for however many you want and however many you're feeding.

Ingredients

  • 1 tbsp chickpea (gram) flour
  • 4-5 tbsp water (try sparkling water, it makes a fluffier pancake)

Toppings

  • Greek yoghurt with walnuts
  • Greek yoghurt with blueberries or raspberries or strawberries (leave the berries whole or whizz them in the blender to make a berry sauce
  • Greek yoghurt with nuts and seeds

Extras:  Add a little vanilla essence to your yoghurt for extra sweetness, grate a little dark chocolate over the top to finish off

Method

  1. Dribble a little oil inot your non-stick frying pan over a moderate heat, wipe out the excess with kitchen paper.
  2. Measure the chick pea flour into a small bowl, add water and whisk until dissolved (consistency is like double cream).
  3. Pour mixture into the heated frying pan and tilt pan to spread mixture evenly around.
  4. Cook for about 2 minutes on each side which will make the pancake easy to fold.
  5. Add your toppings and serve immediately.

Healthy Banana Pancakes

Healthy banana pancakes make a delicious change to the traditional pancakes cooked with wheatflour.  We have also made a couple of delicious suggestions for toppings. Eat and enjoy!

Please note these pancakes are only suitable for weight maintenance.

Serves 1

Ingredients

  • 2 eggs
  • 1 ripe medium banana

Toppings

  • Greek yoghurt with blueberries, raspberries, strawberries or blackberries.
  • Or mix a little vanilla essence into your yoghurt to increase the sweetness and dollop onto the top of your banana pancakes

Method

  1. Mash banana with a fork. Beat two eggs and combine with mashed banana or use a food processor and combine until smooth.
  2. Heat your frying pan over a low heat. Add a small amount of olive oil and wipe out the excess with kitchen paper. Next, pour your banana batter to form a circle. Flip after the edges begin to cook.
  3. Allow the pancakes to cook through - a matter of seconds.
